His self-made success as a restaurant owner and chef is the kind of story that inspires people. He started from the bottom washing dishes, then to line cook, prep, busser, server, and then chef. But the journey wasn’t easy at all.

Today Juan and his partner Luis Hoyos own 5 restaurants in Miami, Florida. They employ over 200 people and make one of the freshest and more delicious Peruvian ceviches in the country.
